Hard to believe that in May we are discussing strawberries. Boistfort Valley Farms, just outside Chehalis, will be bringing their organic beauties this Sunday. Farmer Heidi reports that it's their earliest strawberry harvest ever. A few kitchen tricks for consideration:
- Sliced strawberries, tossed with balsamic vinegar, chopped fresh ginger and romaine
- "Shaved" asparagus (done with a vegetable peeler), sliced strawberries, thinly sliced green garlic or spring onion, squeeze of fresh lemon
- Make strawberry water with the tops and other parts you might otherwise discard and allow them to steep for at least 1 hour. Strain, serve with mint and enjoy.
- Blend strawberries with plain Greek yogurt for dessert, topped off with a drizzle of honey

In other news....Aimee Morrow, the creative force behind Soulever Chocolates, is saying farewell for the rest of the year to further her cacao studies. This fall, she writes, "I'll be travelling down to Costa Rica to work on La Iguana cacao farm, to get up close and personal with the cacao tree, and to learn the entire process from harvest to processing to production, bean to bar so to speak!"
