Green (or Spring) Garlic

Green garlic is simply the young sprouts of garlic in spring, similar to green or spring onions, and it can be used in much the same way. Green garlic comes from farmers thinning their garlic fields in spring, though many grow extra garlic now specifically for this much desired crop. Green garlic can be added to sautés much like mature garlic, though it is milder and sweeter, and it adds a nice grassiness. It also adds a nice mild garlic flavor to roasted vegetable dishes, too, like a spring favorite of morel mushrooms, asparagus, spring sweet onions and green garlic.
